Please Welcome the 10th Annual Summer Bridge: Class
Twenty-two new Auggies will begin their journey at Augsburg College with TRIO/SSS Summer Bridge! This five-week long academic program is offered to Augsburg first-year students who qualify for the TRIO/SSS program, meeting first generation, low income, disability, and/or academic need requirements. Summer Bridge runs Sunday, July 10th through Thursday, August 11th, 2011.
Summer Bridge students will take their first two Augsburg courses: REL 100: Christian Vocation and the Search for Meaning taught by Mark Tranvik, and COM 111: Introduction to Public Speaking taught by Bob Groven. In addition to these courses, Summer Bridge students attend Supplemental Instruction sessions, workshops to learn more about Augsburg College and college life, as well as social and cultural enrichment activities. The students will develop a strong sense of community through learning and living together. The Summer Bridge program and TRIO/SSS are jointly funded by the U.S. Department of Education and Augsburg College.
We are excited to announce that this year marks the 10th annual TRiO/SSS Summer Bridge program at Augsburg! A great deal of appreciation goes to everyone who continues to help us make this program a huge success every year!

Farmers Market, now with A'viands
WEST BANK FARMERS MARKETS
Tuesdays
Brian Coyle Community Center 11-1 pm
Augsburg College Foss Center 2-5 pm
Tomorrow marks the second farmers market of our third season with an exciting new addition - A'viands (only at the Augsburg market). Last week we started the new season with Campus Kitchen selling fruit, rice, honey, bread, and other items. While the other three family vendors sell fresh, sustainably raised vegetables that they grow themselves, Campus Kitchen will sell non-local items in order to better serve all our neighbors by increasing access to fresh, healthy food at the market. We also have a Somali intern interpreting and will also begin accepting EBT within the next two weeks.
And starting tomorrow, if you're too hungry to wait to go home and cook your fresh vegetables, A'viands will be selling food to enjoy on site.
Each week, we'll send an email reminder with updates, recipes for what's in season, and interesting information about what's happening around food on campus and in the community. If you'd like these messages in email, in all it's glory with photos and colors, join the list at http://listserv.augsburg.edu/sympa/subscribe/westbankfarmersmarket-list
WHAT YOU'LL FIND THIS WEEK
In these earlier days you'll find lettuce greens, spinach, cooking greens, onions, potatoes, peas, green beans, broccoli, kohlrabi, herbs like dill, parsley, and cilantro, and a few other things. Zucchini's even starting to come into season.
HOW TO SHOP
The farmers market is not a grocery store, obviously. There's no bar code or packaged items, so the vendors can be a lot more flexible. A common complaint is that their trays are too big, but one just needs to ask them how much a half tray is, or maybe combine a little of this with a little of that. Just don't be shy about asking them for something that works good for you.
VEGETABLE OF THE WEEK - SUGAR SNAP PEA
The soft and tender pods of snap peas are crisp, sweet, and succulent, often served in salads or eaten whole. They may also be stir-fried or steamed. Before being eaten, mature snap pea pods may need to be "stringed", which means the membranous string running along the top of the pod from base to tip is removed. This is best done by snapping the stem off with your fingers (not a knife) and pulling down, as the string is still connected to the stem. Over-cooking the pods will make them come apart. To avoid this, they should only be lightly steamed, or gently fried in oil. Snap pea pods may be frozen, but never canned, as the high temperatures are damaging.
RECIPE OF THE WEEK
Coconut Curry with Peas and Chicken\Tofu
I just made this a couple of nights ago. It's great because you can get almost everything at the market (unfortunately, we don't have chicken or meats here yet), it's simple (takes 30-40 minutes), and you can't really screw it up (all the measurements are flexible). Hope you enjoy it
1 pound chicken breast or tofu
1 bunch green onions
3 cloves of garlic
cooking oil (olive, sesame, coconut, or whatever else you want to use)
1 tablespoon chopped ginger
3 cups of sugar snap peas
1 bunch spinach
1 can (14 oz or so) of coconut curry
Red or green curry paste (to taste)
Salt and pepper (to taste)
Rice or rice noodles
1) Chop chicken/tofu, garlic, onions, and/or ginger and toss into a wok or large pan or wok with the oil and start cooking on low heat
2) Start boiling water for rice or rice noodles. Follow the directions (not provided here) for the desired quantity
3) While that's cooking, remove pea pod stems, chop in half if desired, chop spinach or any other cooking green and add to the wok ~10 minutes after you begin cooking meat/tofu
4) When all the ingredients taste like they're sufficiently cooked, pour over with the coconut milk and add salt and curry to taste
5) Enjoy it thoroughly
